Hearty Ingredients: Beans

It’s fall and you know what that means…time to celebrate all things that warm our hearts like hearty soups and sweaters. I know it sounds weird but at our household we love beans. Cale grew up on a farm so he’ll eat anything that includes mans 2 basic food groups; meat and potatoes. If you’ve been shopping recently I’m sure you’ve noticed that buying all that meat and starchy foods is 1. not good for you and 2. expensive. Beans are a great way to supplement more protein into your diet without the added fats and cholesterol in most meats. I’ve been spending a lot more time in the bean aisle recently just exploring all the colors and facets of beans. Not only are they super cheap but they are another way to eat healthy and fresh foods all winter long.

Bagged or canned beans make a convenient dinner one night and an easy left-over side dish the next! A great way to get your daily fiber intake along with iron and magnesium. Only 200 calories per cup.

(In order shown from top to bottom)

1) RED KIDNEY BEANS:
Recommend in: Stews, mixed bean salad, chili and Cajun bean dishes.

2) GREAT NORTHERN BEANS
Recommended in: Any recipe that uses other white beans, navy beans or cannellini beans. Absorb spices and herb flavors, perfect for stews and varieties of baked beans.

3) BLACK BEANS
Recommended in: Soups, stews, rice and beans, Mexican dishes, and Central and South American cuisine.

4) MIX: Yellow and Green Split Beans and Whole Yellow Beans
Recommended in: Split pea soup for their mild flavor and soft texture

5) PINTO BEANS
Recommended in: Mexican food as mashed refried beans

Make sure you leave plenty of time to soak your bagged beans. Visit this website for more on how to prep beans and the great benefits of this truly magical fruit! ;)
